Golden sauteed mushrooms, creamy hummus and crisp lavash make this roll a lunch worth looking forward to. It comes together in about 20 minutes, packs well for work or school, and tastes just as good warm as it does at room temperature. If you enjoy easy wraps, you will love how simple and satisfying this vegetarian roll is.

Ingredients
- For 1 roll: 1 onion, chopped
- 200 g (7 oz) large button mushrooms (about 6), sliced
- 1/2 sheet lavash (about 50 g / 1.75 oz)
- 40 g (1.5 oz) hummus
- Green onions, chopped
Instructions
- Saute the onion and mushrooms until golden.
- Spread the lavash with hummus, add the mushroom filling, and sprinkle with green onions.
- Roll up tightly and pan-fry until crisp on all sides.
Tips
- Do not overfill the lavash, or it will be hard to roll tightly and may tear while frying.
