Homemade chocolate souffle bars coated in dark chocolate glaze

Ingredients

For the filling:

  • 200 ml (3/4 cup + 1 tbsp) light cream (10% fat)
  • 50 g (1.75 oz) dark chocolate
  • 10 g (1 tbsp) gelatin
  • 20 ml (4 tsp) cold water
  • Sweetener to taste

For the glaze:

  • 50 g (1.75 oz) dark chocolate

Instructions

  1. Bloom the gelatin in the cold water. Heat the cream to a boil, remove from the heat, add the chocolate pieces, and stir until melted. Stir in the bloomed gelatin (and sweetener, if using) until fully dissolved.
  2. Pour into molds or one large pan; refrigerate for at least 3 hours until set.
  3. Unmold and cut into bars.
  4. Melt the glazing chocolate and dip each bar to coat.
  5. Let the chocolate set, then serve.

Tips

  • Chill the bars well before dipping so the glaze sets in a thin, even coat.
  • Use a sharp, warm knife to cut clean bars, wiping the blade between cuts.
