This No-Bake Dulce de Leche Cheesecake is pure indulgence without ever turning on the oven. A buttery cookie and walnut crust holds a silky cottage cheese filling swirled with rich, caramelly dulce de leche. Chill it until perfectly set, then slice into creamy, golden wedges for a show-stopping dessert that is surprisingly easy.

Ingredients
- 10 g gelatin + 10 tbsp water
- 250 g (9 oz) plain cookies
- 50 g (2 oz) walnuts
- 150 g (10 tbsp) butter, softened
- 540 g (19 oz) cottage cheese
- 360 g (12.5 oz) dulce de leche (cooked condensed milk)
Instructions
- Soak the gelatin in the water. Crush the cookies and walnuts; rub with the softened butter into a dough. Press into an 18 cm pan, forming sides, and freeze.
- Blend the cottage cheese with the dulce de leche until smooth.
- Melt the bloomed gelatin in short microwave bursts. Whip the cheese mixture while drizzling in the gelatin. Fill the crust and refrigerate until fully set.
Tips
- Blend the cottage cheese until completely smooth before adding the dulce de leche to avoid lumps.
- Melt the gelatin gently in short bursts and drizzle it in while whipping so it sets evenly.
- Chill the cheesecake overnight if possible for the cleanest slices and best flavor.
