Ingredients
- 3 tbsp rolled oats, ground in a blender
- 1 egg
- 50 ml (3 tbsp) milk
- 3 g ghee, for the skillet
- For the topping: 30 g (2 tbsp) tomato paste
- 30 g (2 tbsp) Greek yogurt
- 50 g (about 1/3 cup) cherry tomatoes
- 50 g (1/2 bell pepper) bell pepper
- 25 g (1 oz) suluguni cheese
- Mixed salad greens and sesame seeds
Instructions
- Mix the batter ingredients and cook on one side in the skillet.
- Flip, spread with tomato paste and Greek yogurt, add the toppings, and cook on the lowest heat under a lid until the cheese melts.
- Slide onto a plate and shower with greens and sesame.
Tips
- Grind the oats finely for a smoother, more pizza-like crust.
- Keep the heat low under the lid so the cheese melts without burning the base.
- Add your favorite toppings — mushrooms or herbs work beautifully — and see Serious Eats for more skillet cooking tips.
