Ingredients
- 1 ripe pear
- 1 egg
- 50 g (3.5 tbsp) plain yogurt
- 80 g (2/3 cup) flour
- Handful of raisins
- Handful of dried apricots, chopped
- Oil for frying
Instructions
- Grate the pear on a coarse grater.
- In a large bowl, whisk the egg with the yogurt.
- Add the grated pear and stir.
- Fold in the flour, raisins, and apricots; mix well. Heat a little oil in a large skillet.
- Spoon the batter into the pan and fry 3-4 minutes per side until golden.
Tips
- Grate the pear just before mixing so it does not brown.
- Keep the heat at medium — the fruit sugars brown quickly, so watch the first batch closely.
- Chop the dried apricots small so they distribute evenly through the batter.
