Pork baked with mushrooms and cheese, fresh from the oven with a golden cheese crust

Ingredients

  • 400–500 g (14–18 oz) pork loin
  • 1 tsp mustard
  • 3 tbsp mayonnaise
  • 1–2 tomatoes, sliced
  • 1 onion, sliced into rings
  • 250–300 g (9–10.5 oz) mushrooms, sliced
  • Fresh herbs
  • 200 g (7 oz) hard cheese, grated
  • Salt and black pepper to taste

Instructions

  1. Slice the pork and pound each piece well on both sides. Season with salt and pepper and arrange in a baking dish.
  2. Mix the mayonnaise with the mustard and brush each piece of meat. Top with onion rings and tomato slices, then the mushrooms sautéed with herbs and salt.
  3. Combine the remaining mayonnaise with about 150 g of the grated cheese and spread over the mushrooms.
  4. Bake in a preheated oven at 180°C (350°F) for 30 minutes.
  5. Sprinkle with the remaining cheese and bake 10 minutes more.

Tips

  • Pound the pork evenly so every piece cooks at the same rate and stays tender. If you love cheesy bakes, try these pork steaks baked under a cheese coat next.
  • Sauté the mushrooms until their liquid evaporates — this concentrates their flavor and keeps the dish from turning watery.
  • For deeper flavor, marinate the pork in the mustard-mayonnaise mix for 30 minutes before assembling. Check safe pork cooking temperatures at USDA and browse more dinner ideas at Allrecipes.
