Ingredients
- 200 g (7 oz) chocolate (milk, dark, or a mix)
- 115 g (8 tbsp) butter
- 3 eggs
- 60 g (1/2 cup) all-purpose flour
- 30 g (1/4 cup) cocoa powder
- Pinch of vanillin
- Pinch of salt
- 150 g (3/4 cup) white sugar
- 90 g (1/2 cup) brown sugar
- 80 g (2/3 cup) nuts, chopped
Instructions
- Chop the chocolate, add the butter, and melt in a double boiler. Stir smooth.
- In another bowl, combine both sugars and beat in the eggs one at a time, mixing after each.
- Sift in the flour and cocoa; add the vanillin and salt. Mix.
- Fold in the chopped nuts.
- Spread in a lined pan and bake in a preheated oven at 180C (350F) for 35-40 minutes.
- The center will look soft and underdone – that is correct. Do not overbake or it will dry out.
Tips
- Do not overbake: the center should still look slightly soft when you take the pan out — it sets as it cools.
- Toast the nuts in a dry skillet for 3-4 minutes before folding them in; it makes a huge flavor difference.
- For clean slices, chill the brownies for an hour and cut with a warm, dry knife. Nut lovers should also try our Moist Carrot Cake with Walnuts and Raisins, or the Quick Chocolate Cake with Dulce de Leche Cream.
