Ingredients
- 200 g (14 tbsp) butter (82.5%), softened
- 450 g (3 3/4 cups) flour
- 180 g (3/4 cup + 2 tbsp) sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- For the filling: 3 eggs, 400 g (14 oz) cottage cheese, 150 g (3/4 cup) sugar, 200 g (3/4 cup) sour cream
Instructions
- In a large bowl combine the flour, sugar, salt, soda and soft butter.
- Rub into crumbs by hand.
- Filling: combine the cottage cheese, sour cream, sugar and eggs; mix well (a blender works).
- Assemble: press 2/3 of the crumbs into a baking dish, forming edges (not too thick). Pour in the filling.
- Smooth the extra edges, sprinkle with the remaining crumbs.
- Bake at 170-180°C (340-350°F) for about 50 minutes (know your oven). It will rise beautifully.
Tips
- Use soft, room-temperature butter so the crumbs form easily and bake up tender.
- Blend the filling until smooth for a creamy, cheesecake-like texture.
- Let the pie cool before slicing, and see Allrecipes for more classic crumb pie ideas.
