Ingredients
- 180 g (6 oz) spaghetti
- 4 sausages
- For the sauce: 4-5 tomatoes, 2 garlic cloves, fresh basil, 2 tbsp sugar, 100 ml (1/3 cup + 1 tbsp) red wine, 1/2 lemon
Instructions
- Mince the garlic.
- Blanch the tomatoes in boiling water, then cold water; peel.
- Chop the tomatoes and basil.
- Sauté the garlic, add the tomatoes and simmer 5-7 minutes.
- Season with salt, pepper, spices and lemon juice.
- For a smooth sauce, blend; pour in the wine and reduce 10 minutes.
- Stir in the basil and cook the spaghetti.
- Chop the sausages, toss with the sauce and spaghetti; mix everything.
Tips
- Use ripe, sweet tomatoes for the best sauce, and balance the acidity with the sugar and a squeeze of lemon.
- Let the wine reduce fully so the sauce turns rich and silky rather than sharp.
- Check the USDA food safety guidance to make sure sausages are cooked thoroughly before serving.
