These royal-style liver fritters are a clever way to turn humble liver into an elegant, satisfying dinner. Thin savory fritters are layered with tender sautéed vegetables and a creamy cheese sauce, then baked until golden. High in protein and surprisingly light, this is comfort food you can feel good about.

Stacked royal-style liver fritters layered with sautéed vegetables and creamy cheese sauce

Ingredients

  • 500 g (1.1 lb) chicken or beef liver
  • 1 egg
  • 2–3 garlic cloves
  • 40 g (1/3 cup) whole wheat flour
  • 200 g (7 oz) onion (100 g for the liver mixture, 100 g for frying)
  • 150 g (5 oz) carrots
  • 100 g (3.5 oz) bell pepper
  • 1 tsp vegetable oil
  • 100 g (1/3 cup + 1 tbsp) sour cream (10%)
  • 30 g (1 oz) hard cheese (30% fat), grated
  • Salt and ground black pepper, to taste

Instructions

  1. Grind the liver with 100 g of the onion, then mix in the egg, crushed garlic, salt, pepper, and flour.
  2. Fry thin fritters on both sides in a dry non-stick skillet until cooked through.
  3. Dice the remaining onion, carrots, and bell pepper and sauté in a little oil until tender.
  4. For the sauce, stir the sour cream with the grated cheese, salt, and pepper.
  5. Spread sauce on each liver fritter, add a layer of vegetables, then stack another fritter on top and spread with more sauce.
  6. Bake for about 10 minutes in a hot oven, just until the sauce sets and turns golden.

Tips

  • Soak the liver in milk for 30 minutes before grinding for an extra-mild flavor. Serious Eats has great guides on making the most of offal cuts.
  • Keep the fritters thin so they cook through without burning — about the thickness of a pancake is ideal.
  • Serve with Zucchini Mini Taco Shells or a crisp salad for a light, balanced meal.
