If you love light, fruity sweets, this sugar-free apple pastila is about to become your new favorite. Whipped apple puree turns pale and cloud-like, then sets into a delicate, melt-in-your-mouth treat with no added sugar and no baking required — much like our High-Protein Berry Sponge Cake, it proves that healthy desserts can be truly indulgent. Pair it with a glass of our Healthy Kiwi Apple Banana Smoothie for a fresh, fruity combination.

Ingredients
- 300 g (10.5 oz) peeled apples
- 20 g (2 tbsp) gelatin
- Sugar substitute to taste
- 2 tbsp water (optional)
Instructions
- Peel the apples and blend into a smooth puree.
- Transfer the puree to a saucepan, add the gelatin and warm gently until the gelatin dissolves — do not boil. Add a couple of spoonfuls of water and sweetener to taste if needed.
- Whip with a mixer until pale and fluffy.
- Pour into a mold and refrigerate for 2 hours until set.
Tips
- Choose sweet, aromatic apple varieties so you need less sweetener — you can find more healthy baking inspiration at allrecipes.com.
- Do not let the mixture boil after adding the gelatin — high heat weakens its setting power.
- Cut the set pastila into neat squares and serve it alongside our Coconut Custard Trifle for a light dessert spread.
