- 250 g (9 oz) puff pastry
- 250 g (1 cup) cottage cheese
- 150 g (2/3 cup) cream cheese
- 50 g (1/3 cup) currants
- 1 egg
- Pinch of vanillin
- Jerusalem artichoke syrup, to taste
Instructions
- Roll out the puff pastry and roll into a log; cut into equal pieces and shape rims.
- Mix the cottage cheese, vanillin, egg, sweetener, and cream cheese; fill the baskets.
- Top with berries and bake at 180C (350F) for about 30 minutes.
- Dust with powdered sugar when done.
Tips
- Keep the puff pastry chilled until shaping so the rims rise crisp and golden.
- Do not overfill the baskets; the cheese filling sets as it bakes and should stay neat.
