Ingredients
- For the dough: 300 ml (1 1/4 cups) warm milk
- 10 g fresh yeast
- 2 tbsp sugar
- 80 g (5.5 tbsp) butter
- 2 eggs
- 1 tsp salt
- Vanilla
- 600 g (5 cups) flour
- For the filling: 400 g (14 oz) cottage cheese
- 100 g (1/2 cup) sugar
- 70 g (1/2 cup) raisins
- Plus 1 egg yolk for brushing
Instructions
- Stir the yeast into the warm milk; rest 15 minutes. Add the remaining dough ingredients, gradually adding flour, and knead a soft dough. Rise in a warm place for 1 hour.
- Blend the cottage cheese with the sugar, stir in the raisins.
- Roll out the dough, spread with filling and roll into a log. Slice into buns, place on a parchment-lined tray, proof 15 minutes, brush with yolk and bake at 180°C (350°F) until golden.
Tips
- Use warm, not hot, milk so the yeast stays active and the dough rises well.
- Soak the raisins in warm water for a few minutes if they are dry, then drain well; for another simple cottage cheese bake, try our Simple Baked Cottage Cheese Casserole.
