This two-ingredient ice cream is almost too easy to believe: just cottage cheese and dates, blended silky-smooth and frozen into a creamy, naturally sweet treat. It tastes surprisingly like salted caramel with a pinch of flaky salt and chopped nuts on top.

Ingredients
- 400 g (14 oz) grainy cottage cheese in cream
- 100-120 g (about 2/3 cup) pitted dates
Instructions
- Pit the dates (peel them too if your blender is not powerful) and blend with the cottage cheese until completely smooth.
- Freeze for several hours. Try it sprinkled with flaky salt and chopped nuts — it tastes like salted caramel.
Tips
Blend for longer than you think necessary; any graininess will disappear and the texture will turn beautifully creamy after freezing.
Let the ice cream sit at room temperature for 5-10 minutes before scooping so it softens to a perfect, scoopable texture.
