These zucchini pizza bites are a light, cheesy way to satisfy a pizza craving without the heavy crust. Tender zucchini rounds get topped with tomato, bubbling mozzarella and herbs, then baked until golden. They make a perfect snack alongside a Mini Lavash Skillet Pizza night, or pair them with Cheesy Kefir Flatbreads for a fun sharing table.

Ingredients
- 1 zucchini, sliced into rounds
- 2-3 tbsp tomato paste
- 100 g (3.5 oz) mozzarella, cubed
- 2 tbsp grated parmesan
- Seasonings to taste (oregano, basil, garlic)
Instructions
- Preheat the oven to 200°C (400°F).
- Arrange the zucchini rounds on a parchment-lined baking sheet.
- Top each with tomato paste, mozzarella, parmesan, and seasonings.
- Bake about 18 minutes until the cheese melts and bubbles.
- Cool slightly and enjoy!
Tips
- Slice the zucchini evenly so all the bites cook at the same rate, and pat the rounds dry for a less watery result.
- Do not overload each round with tomato paste, or the cheese will slide off as it melts.
