These 15-minute lazy sushi rolls skip the rolling mat and the fuss, but keep all the fresh, creamy flavors you love. Tender fish, sticky seasoned rice, smooth cream cheese and ripe avocado come together in soft, bite-sized balls that are perfect for a quick weeknight dinner or a fun sushi night at home.

Ingredients
- 300 g (1 1/2 cups) sushi rice, cooked
- 200 g (7 oz) fish of choice (salmon, tuna)
- 2 tbsp cream cheese
- 1 avocado (optional)
- 1 tsp salt
- 1 tbsp rice vinegar (or 4 tbsp apple cider vinegar + 2 tbsp water + 1 tsp sugar, heated until dissolved)
Instructions
- Cook the rice sticky without stirring, covered. Season with salt and vinegar; let cool completely.
- On plastic wrap, arrange slices of fish, then rice and the remaining fillings. Shape into balls and rest a couple of minutes. Serve with soy sauce.
Tips
- Let the rice cool completely before shaping, so the balls hold together and the fish stays fresh.
- Wet your hands or the plastic wrap lightly to stop the sticky rice from clinging.
- Chill the shaped balls for a few minutes if your kitchen is warm, then serve with soy sauce, pickled ginger or a drizzle of spicy mayo.
