Crispy fried cheese sticks with berry dipping sauce

Ingredients

  • 200 g (7 oz) firm cheese
  • 3 eggs
  • 2 tbsp flour, plus extra for dredging
  • Pinch of salt
  • 100 g (1 cup) breadcrumbs (panko works best)
  • Oil, for deep frying
  • For the berry sauce: 150 g (5 oz) mixed berries
  • 1 tbsp lemon juice
  • 10 g (2 tsp) cornstarch

Instructions

  1. Cut the cheese into sticks about 1.5 cm (1/2 inch) thick.
  2. Whisk the eggs with 2 tbsp flour and a pinch of salt. Put plain flour and breadcrumbs in separate bowls.
  3. Heat the oil for deep frying.
  4. Dredge each cheese stick in flour, then egg, then flour, then egg again — then dip in egg and coat with breadcrumbs, dip in egg once more, and finish with a second coating of breadcrumbs. This double breading keeps the cheese from leaking out.
  5. For the sauce, blend the berries, add the lemon juice and cornstarch, and simmer over low heat for 3-4 minutes until thickened.
  6. Fry the cheese sticks in the hot oil until lightly golden. Serve warm with the berry sauce.

Tips

  • The double breading is the secret — don’t skip the second dip in egg and breadcrumbs, or the cheese will leak out. For another fun twist, try our crispy potato cheese sticks.
  • Fry in small batches so the oil temperature stays high and the sticks turn out crisp, not soggy.
