Ingredients
- 420 g (15 oz) potatoes
- 100 g (3.5 oz) hard cheese, grated
- 90 g (3/4 cup) cornstarch
- Salt and pepper to taste
- Vegetable oil for frying
- Your favorite dipping sauce for serving
Instructions
- Peel and rinse the potatoes, cut them into pieces and boil until fully tender. Drain well.
- Mash the hot potatoes into a smooth puree using a masher or fork.
- Stir in the grated cheese and cornstarch. Mix until you have a dough-like ball.
- Place the dough on a sheet of parchment paper, cover with another sheet and roll out to about 1 cm (1/2 inch) thick.
- Cut into sticks (cut very long ones in half).
- Heat vegetable oil in a skillet and fry the sticks until golden, placing them in a single layer without touching.
- Drain on paper towels and serve with your favorite sauce.
Tips
- Boil the potatoes until completely tender and drain them well — a smooth, dry mash is the secret to a dough that holds together.
- Fry in a single layer without crowding the pan so the sticks crisp evenly instead of steaming.
- Drain on paper towels and serve hot with your favorite sauce. For an easy weeknight spread, pair them with our Egg and Green Onion Poured Pie; for more crispy snack inspiration, browse the ideas at Allrecipes.
