Ingredients
- 200 g (7 oz) firm cheese
- 3 eggs
- 2 tbsp flour, plus extra for dredging
- Pinch of salt
- 100 g (1 cup) breadcrumbs (panko works best)
- Oil, for deep frying
- For the berry sauce: 150 g (5 oz) mixed berries
- 1 tbsp lemon juice
- 10 g (2 tsp) cornstarch
Instructions
- Cut the cheese into sticks about 1.5 cm (1/2 inch) thick.
- Whisk the eggs with 2 tbsp flour and a pinch of salt. Put plain flour and breadcrumbs in separate bowls.
- Heat the oil for deep frying.
- Dredge each cheese stick in flour, then egg, then flour, then egg again — then dip in egg and coat with breadcrumbs, dip in egg once more, and finish with a second coating of breadcrumbs. This double breading keeps the cheese from leaking out.
- For the sauce, blend the berries, add the lemon juice and cornstarch, and simmer over low heat for 3-4 minutes until thickened.
- Fry the cheese sticks in the hot oil until lightly golden. Serve warm with the berry sauce.
Tips
- The double breading is the secret — don’t skip the second dip in egg and breadcrumbs, or the cheese will leak out. For another fun twist, try our crispy potato cheese sticks.
- Fry in small batches so the oil temperature stays high and the sticks turn out crisp, not soggy.
