Honey Cookies with Cinnamon and Ginger (Soft & Aromatic)

Recipe infographic: honey cookies with cinnamon and ginger — ingredients and step-by-step visual guide

These honey cookies taste like childhood. Soft, fragrant, and deeply golden, they get their flavor from real honey warmed with cinnamon and ginger — the dough comes together in one pot and the whole kitchen smells incredible while they bake. Cut them into any shapes you like; they stay soft for days (if they last that long).

Soft honey cookies with cinnamon and ginger

Ingredients

  • 110 g (1/2 cup) butter
  • 1 egg
  • 210 g (about 2/3 cup) honey
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 430 g (about 3 1/2 cups) all-purpose flour, sifted
  • Pinch of salt
  • 1 1/2 teaspoons baking powder

Instructions

  1. In a saucepan, combine the honey, cinnamon, ginger, and salt.
  2. Warm over medium heat, stirring, until it just comes to a boil. Remove from heat.
  3. Stir in the baking powder — the mixture will foam up; that is exactly what should happen.
  4. Add the butter and stir until melted. Let cool to lukewarm.
  5. Beat in the egg, then add the sifted flour and knead into a soft, elastic dough that does not stick to your hands.
  6. Roll out to about 7 mm (1/4 inch) thick and cut out shapes with cookie cutters.
  7. Bake at 180°C (350°F) for about 10 minutes, until golden at the edges.

Tips

Do not overbake — the cookies firm up as they cool and should stay soft inside. Dip half of each cooled cookie in melted dark chocolate for an extra treat. Nutrition (per 100 g): 186 kcal | Protein 7 g | Fat 5.9 g | Carbs 27.9 g.
