Ingredients

  • 500 g (1.1 lb) chicken breast
  • 1 bag (about 400 g / 14 oz) frozen mixed vegetables
  • 5 button mushrooms, sliced
  • 300 ml (1 1/4 cups) 10% light cream
  • 100 g (3.5 oz) cheese, grated
  • 1 bunch fresh herbs (parsley or dill), chopped
  • Salt and black pepper to taste

Instructions

  1. Preheat the oven to 180°C (350°F). Lightly pound and slice the chicken breast.
  2. In a baking dish, layer the mixed vegetables, chicken slices and mushrooms, seasoning each layer with salt and pepper.
  3. Pour the cream over everything and top with the grated cheese.
  4. Bake for 40 minutes until golden and bubbling. Garnish with fresh herbs before serving.

Tips

  • Pound the chicken to an even thickness so every piece cooks through in the same time.
  • Season each layer as you build the casserole — it makes a big difference in the final flavor.
  • Let the casserole rest 5 minutes after baking so the cream settles. For safe chicken cooking guidance, see the food safety resources at USDA, and Serious Eats has great casserole technique tips.
