Ingredients
- 250 g (about 1 cup) Greek yogurt
- 200 g (7 oz) strawberries (or any berries)
- 18 g (about 2 1/2 tbsp) powdered gelatin
- 90 ml (6 tbsp) cold water
- Sugar substitute to taste (about 6 scoops; moderate sweetness)
Instructions
- Sprinkle the gelatin over the cold water and let it bloom for 10 minutes.
- Add 2 tbsp water to the strawberries and bring just to a boil, then remove from the heat immediately (no need to cook them through).
- Melt the bloomed gelatin in the microwave, about 10 seconds.
- Blend the strawberries, Greek yogurt, melted gelatin and sweetener with an immersion blender until smooth.
- Pour into molds or a single dish and refrigerate for several hours until set.
Tips
- Let the gelatin bloom fully in the cold water before melting — this guarantees a smooth, lump-free set.
- Do not boil the strawberries; just bring them to a boil and take them off the heat to keep their fresh flavor and bright color.
- Chill the dessert for at least 4 hours, or overnight, so it firms up properly. For more light dessert ideas, browse the collections at Allrecipes.
