Ingredients
- 150 g (5.3 oz) cottage cheese (5% fat)
- 1 egg
- 2 tbsp (20 g) semolina
- 70 g (about 1/4 cup) Greek yogurt
- Sugar substitute and berries to taste
Instructions
- Blend all the ingredients (except the berries) until smooth, ideally with a blender for a silky texture.
- Transfer the mixture to a baking dish and scatter the berries on top.
- Bake in a preheated 180°C (350°F) oven for about 40 minutes until golden.
Tips
- Blend until completely smooth — any graininess in the cottage cheese will show in the final texture.
- Use room-temperature ingredients so the mixture blends silky and bakes evenly. Allrecipes has plenty more cottage cheese baking inspiration.
- Let it cool in the dish for 15 minutes before slicing; it firms up as it rests.
