This banana roll cake is soft, creamy and irresistibly pretty: a light sponge rolled around sweet bananas, tangy cream cheese and juicy berries. If you love banana bakes, try Banana Apple Walnut Oat Cake or Banana Oat Cocoa Cake next.

Ingredients
- 2 bananas
- 3 eggs
- 200 g (3/4 cup) cream cheese
- 50 g (1/4 cup) sugar
- 50 g (3 tbsp) sour cream (20%)
- Berries (black currant works well)
- 70 g (1/4 cup) condensed milk
Instructions
- Beat the eggs with the sugar into a light sponge batter (you may add 70 g flour to the base before whipping if you like).
- Spread thin on greased parchment and bake until just set – handle the delicate sponge carefully.
- Cool the sponge completely, or the roll may crack.
- Spread with cream cheese mixed with sour cream and condensed milk; add sliced bananas and berries.
- Roll up, wrap in plastic, and chill at least 1 hour to set.
Tips
- Roll the sponge while it is still slightly warm if it resists, then unroll to fill once cool.
- Chill the finished roll well before slicing for neat, clean rounds.
