Coconut cottage cheese truffles rolled in desiccated coconut, served on a plate

Ingredients

  • 200 g (3/4 cup) cottage cheese
  • 70 g (3/4 cup) desiccated coconut (+ more for coating)
  • 25 g (1 tbsp) honey or other sweetener
  • Chocolate for drizzling (optional)

Instructions

  1. Mix the cottage cheese, coconut, and honey into a uniform mass.
  2. Chill 30 minutes, then roll into balls.
  3. Roll in more coconut and refrigerate until serving. Drizzle with melted chocolate if you like.

Tips

  • Chill the mixture well before rolling so the truffles hold their shape, and wet your hands lightly to make rolling much easier.
  • For a firmer, snowier bite, roll the truffles twice in coconut and keep them refrigerated until serving.
