These no-bake Coconut Cottage Cheese Truffles are soft, creamy and rolled in snowy coconut — a light dessert that comes together in minutes and chills into perfect bite-size treats. Sweetened with honey and finished with an optional drizzle of chocolate, they are a healthier way to satisfy a sweet craving. Ingredients
- 200 g (3/4 cup) cottage cheese
- 70 g (3/4 cup) desiccated coconut (+ more for coating)
- 25 g (1 tbsp) honey or other sweetener
- Chocolate for drizzling (optional)
Instructions
- Mix the cottage cheese, coconut, and honey into a uniform mass.
- Chill 30 minutes, then roll into balls.
- Roll in more coconut and refrigerate until serving. Drizzle with melted chocolate if you like.
Tips
- Chill the mixture well before rolling so the truffles hold their shape, and wet your hands lightly to make rolling much easier.
- For a firmer, snowier bite, roll the truffles twice in coconut and keep them refrigerated until serving.
