This humble, hearty one-pot dinner is pure comfort: tender stewed cabbage, smoky sausages, sweet carrot and a touch of tomato, all cooked together until deeply savory. It is budget-friendly, filling and perfect for busy evenings, much like braised cabbage with chicken and cozy lazy cabbage rolls. Serve it hot with fresh herbs and crusty bread.

Ingredients
- 1 head white cabbage (about 1.5 kg / 3.3 lb)
- 500 g (1.1 lb) smoked hunting-style sausages
- 1 onion, halved and sliced
- 1 carrot, coarsely grated
- 3 tbsp crushed tomatoes (or 2 tbsp tomato paste + 1 fresh tomato, peeled and chopped)
- 2 bay leaves
- 100 ml (1/3 cup + 4 tsp) water
- Salt and pepper to taste
- Fresh herbs to serve
Instructions
- Slice the sausages into rounds, the onion into half-rings, and grate the carrot. Saute the onion and carrot until nearly done, add the sausages, and fry together about 5 minutes.
- Stir in the water and crushed tomatoes (or tomato paste and fresh tomato).
- Add the bay leaves, salt, and pepper; simmer about 10 minutes.
- Transfer everything to a heavy-bottomed pot. Layer roughly chopped cabbage on top (not too thin), and stir from time to time as it cooks down.
- Cover and stew until the cabbage is fully tender.
- Serve hot, sprinkled with fresh herbs.
Tips
- Cut the cabbage in generous pieces so it does not turn to mush as it stews.
- Taste before serving and adjust salt, pepper and tomato to balance the smokiness.
