Stewed Cabbage with Smoked Sausages

Recipe infographic: Stewed Cabbage with Smoked Sausages — ingredients and step-by-step visual guide

This humble, hearty one-pot dinner is pure comfort: tender stewed cabbage, smoky sausages, sweet carrot and a touch of tomato, all cooked together until deeply savory. It is budget-friendly, filling and perfect for busy evenings, much like braised cabbage with chicken and cozy lazy cabbage rolls. Serve it hot with fresh herbs and crusty bread.

A bowl of stewed cabbage with smoked sausages and fresh herbs

Ingredients

  • 1 head white cabbage (about 1.5 kg / 3.3 lb)
  • 500 g (1.1 lb) smoked hunting-style sausages
  • 1 onion, halved and sliced
  • 1 carrot, coarsely grated
  • 3 tbsp crushed tomatoes (or 2 tbsp tomato paste + 1 fresh tomato, peeled and chopped)
  • 2 bay leaves
  • 100 ml (1/3 cup + 4 tsp) water
  • Salt and pepper to taste
  • Fresh herbs to serve

Instructions

  1. Slice the sausages into rounds, the onion into half-rings, and grate the carrot. Saute the onion and carrot until nearly done, add the sausages, and fry together about 5 minutes.
  2. Stir in the water and crushed tomatoes (or tomato paste and fresh tomato).
  3. Add the bay leaves, salt, and pepper; simmer about 10 minutes.
  4. Transfer everything to a heavy-bottomed pot. Layer roughly chopped cabbage on top (not too thin), and stir from time to time as it cooks down.
  5. Cover and stew until the cabbage is fully tender.
  6. Serve hot, sprinkled with fresh herbs.

Tips

  • Cut the cabbage in generous pieces so it does not turn to mush as it stews.
  • Taste before serving and adjust salt, pepper and tomato to balance the smokiness.
  • Leftovers reheat beautifully; for more one-pot ideas, see Allrecipes and cooking basics from Serious Eats.
