Ingredients
- 120 g (1/2 cup) cottage cheese
- 50-60 g (1/2 cup) grated cheese
- 2 eggs
- Fresh herbs
- Garlic powder
- 20-30 ml (4-6 tsp) milk
- 3-4 tbsp coconut flour (very absorbent — increase if substituting)
- 1/2 tsp baking powder
Instructions
- Mix the cottage cheese, cheese, eggs, flour, spices (salt, garlic, a pinch of sugar), baking powder, and milk.
- With wet hands, shape into buns and flatten slightly.
- Bake at 190-195 C (375-385 F) for 30 minutes (tent with foil if browning too fast).
- Cool slightly, split, and fill as you like — avocado with lemon and bacon is excellent.
Tips
- Wet your hands before shaping so the sticky dough does not cling to your fingers.
- Let the buns cool slightly before splitting, so they hold their shape.
