Golden savory cottage cheese buns with herbs, served on a plate

Ingredients

  • 120 g (1/2 cup) cottage cheese
  • 50-60 g (1/2 cup) grated cheese
  • 2 eggs
  • Fresh herbs
  • Garlic powder
  • 20-30 ml (4-6 tsp) milk
  • 3-4 tbsp coconut flour (very absorbent — increase if substituting)
  • 1/2 tsp baking powder

Instructions

  1. Mix the cottage cheese, cheese, eggs, flour, spices (salt, garlic, a pinch of sugar), baking powder, and milk.
  2. With wet hands, shape into buns and flatten slightly.
  3. Bake at 190-195 C (375-385 F) for 30 minutes (tent with foil if browning too fast).
  4. Cool slightly, split, and fill as you like — avocado with lemon and bacon is excellent.

Tips

  • Wet your hands before shaping so the sticky dough does not cling to your fingers.
  • Let the buns cool slightly before splitting, so they hold their shape.
