Golden banana cottage cheese fritters stacked on a plate

Ingredients

  • 125 g (1/2 cup) soft cottage cheese
  • 1/3 banana
  • 1 heaped tbsp all-purpose flour

Instructions

  1. Mash the banana into a puree.
  2. Stir in the cottage cheese and mix until smooth.
  3. Add the flour and mix again, adjusting the thickness so the mixture holds its shape.
  4. Spoon small fritters onto a well-heated non-stick skillet.
  5. Cook 2-3 minutes per side until golden.

Tips

  • Use a ripe banana with plenty of brown spots — it’s sweeter, so you won’t need any added sugar.
  • Adjust the flour so the batter just holds its shape: too thin and the fritters will spread, too thick and they’ll turn dense.
  • Serve warm with berries or a drizzle of honey, alongside our Cheesy Cottage Cheese Lavash Rolls for a bigger brunch; the cooking guides at Serious Eats are great for mastering skillet technique.
