Three ingredients, five minutes, one happy breakfast. These banana cottage cheese fritters are soft, naturally sweet and packed with protein — the easiest way to turn a ripe banana into a wholesome morning treat. Golden on the outside and tender inside, they’re proof that simple really is best. For another cottage-cheese morning favorite, try our Fluffy Cottage Cheese Casserole.

Ingredients
- 125 g (1/2 cup) soft cottage cheese
- 1/3 banana
- 1 heaped tbsp all-purpose flour
Instructions
- Mash the banana into a puree.
- Stir in the cottage cheese and mix until smooth.
- Add the flour and mix again, adjusting the thickness so the mixture holds its shape.
- Spoon small fritters onto a well-heated non-stick skillet.
- Cook 2-3 minutes per side until golden.
Tips
- Use a ripe banana with plenty of brown spots — it’s sweeter, so you won’t need any added sugar.
- Adjust the flour so the batter just holds its shape: too thin and the fritters will spread, too thick and they’ll turn dense.
- Serve warm with berries or a drizzle of honey, alongside our Cheesy Cottage Cheese Lavash Rolls for a bigger brunch; the cooking guides at Serious Eats are great for mastering skillet technique.
