These baked cottage cheese donuts are soft, lightly sweet, and wonderfully guilt-free. Each golden ring is topped with a silky white-chocolate cottage cheese cream and a sprinkle of cookie crumbs for crunch. They are a delightful dessert or afternoon treat that tastes indulgent without any frying.

Ingredients
For the donuts:
- 180 g (3/4 cup) block cottage cheese
- 1 egg
- 1 yolk, for brushing
- 70 g (about 1/2 cup) rice or wheat flour
- 1 tsp (scant) baking powder
- Sweetener, to taste
For the cream:
- 100 g (1/2 cup) soft cottage cheese (5%)
- 25 g (1 oz) white chocolate
- 1 Oreo cookie, crushed
Instructions
- Mix all donut ingredients and divide into 6 equal pieces (about 48 g each). Shape into rings.
- Brush with yolk and bake at 180 C (350 F) for 25 minutes.
- For the cream: melt the chocolate in a double boiler and stir into the soft cottage cheese.
- Cool the donuts slightly, spread with cream, sprinkle with cookie crumbs, and chill at least 30 minutes so they soak.
Tips
Do not skip the chilling time, as it lets the cream soak in and makes the donuts extra tender. If you love cottage cheese desserts, you will also enjoy this chocolate cottage cheese cheesecake, and for a lighter sweet bite, try these frozen banana chocolate bites. For baking tips, see Allrecipes.
Use a piping bag or a small spoon for a neat cream topping, and keep the finished donuts chilled until serving. They are best within two days, stored covered in the fridge.
