Ingredients
- 4 large potatoes (about 800 g / 1.75 lb)
- 100 g (3.5 oz) bacon, chopped
- 80 g (2.8 oz) hard cheese, grated
- 1 tbsp butter or vegetable oil
- 2 garlic cloves, minced
- Salt and pepper to taste
- Fresh herbs, to serve
Instructions
- Cut the potatoes into thick slices or wedges, toss with butter or oil, garlic, salt, and pepper.
- Roast at 220 C (425 F) for about 20 minutes until nearly tender.
- Top with the bacon and grated cheese; return to the oven for 5 minutes more, until the bacon is crisp and the cheese melts.
- Sprinkle with fresh herbs and serve hot.
Tips
- Cut the potatoes evenly so they roast at the same rate and crisp up together.
- Do not crowd the pan — space lets the potatoes roast instead of steaming.
- Serve them as a side with our Tender Chicken and Napa Cabbage Salad for a balanced, satisfying meal.
