Ingredients

  • 3 round lavash breads or tortillas
  • 300 g (10 oz) ground chicken
  • Salt, to taste
  • 1 tsp chicken seasoning
  • Iceberg lettuce and cherry tomatoes
  • For the Caesar sauce:
  • 150 g (2/3 cup) Greek yogurt
  • 30 g (1/4 cup) grated parmesan
  • 1 tsp grainy mustard
  • 1 tsp lemon juice
  • 1 small garlic clove, pressed
  • Salt and black pepper, to taste

Instructions

  1. Season the ground chicken with salt and spices; spread in a thin layer over the tortillas.
  2. Fry meat-side down in a skillet for 2-3 minutes covered, then wipe the skillet and fry the other side until crisp.
  3. Mix all sauce ingredients; add the chopped lettuce and cherry tomatoes and toss.
  4. Spread over the tortilla, sprinkle with parmesan if desired, and fold in half.

Tips

  • Spread the chicken thinly and evenly so it cooks through quickly and crisps nicely.
  • Wipe the skillet before crisping the lavash side to keep it golden rather than greasy.
