Chicken breasts baked in golden lavash boats with tomato, mushroom and melted cheese

Ingredients

  • 1 chicken breast (about 300 g / 10 oz)
  • 1 large thin lavash (flatbread)
  • 2 tomatoes, sliced
  • 4-5 mushrooms, sliced
  • 50 g (3.5 tbsp) sour cream
  • 30 g (1 oz) hard cheese, grated
  • Fresh dill, chopped
  • 1 garlic clove, minced
  • Salt and spices to taste

Instructions

  1. Make shallow slashes across the top of the chicken breast.
  2. For the filling: mix the sour cream with the dill, garlic, salt, and spices.
  3. Shape the lavash into small boats and pin the sides with toothpicks to hold the shape.
  4. Coat the breast with the sour-cream mixture (inside the slashes too) and place it in a lavash boat. Tuck tomato and mushroom slices into the slashes. Season with extra salt and pepper.
  5. Bake at 200 C (400 F) for 35-40 minutes. Sprinkle with the grated cheese 10 minutes before the end, and bake until melted and golden.
  6. Remove the toothpicks and serve hot.

Tips

  • Pin the lavash firmly so the boats keep their shape while the filling stays juicy.
  • Add the cheese only near the end, so it melts golden without drying out.
