This chocolate Snickers protein crepe is rich, indulgent, and surprisingly high in protein: a soft cocoa crepe filled with creamy protein yogurt, sweet banana, salted caramel, grated dark chocolate, and crunchy peanuts. It tastes like dessert but works beautifully as a post-workout treat or a special breakfast. Ingredients
For the crepe:
- 125 g (1/2 cup) soft cottage cheese
- 2 egg whites + 1 whole egg
- 30 g (3 tbsp) cocoa powder
- 1 tsp psyllium husk (optional)
- 1/2 tsp baking powder
- Vanilla and sweetener to taste
For the filling:
- 100 g (1/3 cup) protein yogurt
- 50 g (1/2) banana, sliced
- 2 g dark chocolate, grated
- Sugar-free salted caramel topping
- 5 g peanuts, chopped
Instructions
- For the crepe, blend the cottage cheese, egg whites, whole egg, cocoa, psyllium, baking powder, vanilla, and sweetener until smooth.
- Cook as one large crepe in a non-stick skillet over the lowest heat with the lid on.
- Fill with protein yogurt and banana slices. Top with more yogurt, caramel topping, grated chocolate, and peanuts. Fold and serve.
Tips
- Keep the heat very low and the lid on so the crepe sets gently without tearing.
- Blend the batter until completely smooth for the softest, most even crepe.
