These Coconut Syrniki with Cherry Sauce are golden, tender cottage cheese pancakes with a delicate coconut flavour, served with a glossy homemade cherry sauce. They are a cosy, protein-rich breakfast or dessert that feels indulgent yet is wonderfully simple to make. Spoon over plenty of cooled cherry sauce and enjoy them warm.

Ingredients
- For the syrniki: 250 g (9 oz) cottage cheese
- 1 egg
- 25 g (2 tbsp) sugar
- 1 tsp vanilla sugar
- 45 g (1/2 cup) coconut flakes
- 30 g (1/4 cup) flour
- For the sauce: 300 g (2 cups) cherries
- 60 g (1/4 cup + 1 tbsp) sugar
- 300 ml (1 1/4 cups) water
- 1 heaped tbsp starch
Instructions
- Syrniki: press the cottage cheese through a sieve. Add the egg, sugar, flour, vanilla sugar and coconut flakes; mix well. Shape and pan-fry on a non-stick skillet.
- Cherry sauce: combine the berries (frozen is fine) with the sugar and 200 ml water; bring to a boil and cook 2-3 minutes. Dissolve the starch in 100 ml water; drizzle into the berries. Bring back to a boil until thickened; cool.
- Plate the syrniki and spoon over the cooled sauce.
Tips
- Pressing the cottage cheese through a sieve gives the smoothest, most tender syrniki. For another cottage cheese classic, try the Perfect Cottage Cheese Pancakes (Syrniki).
- Cool the cherry sauce before serving so it thickens to a glossy spooning consistency. The Cloud-Light Baked Cottage Cheese Casserole is another comforting cottage cheese bake.
