Ingredients
- 200 g (7 oz) cottage cheese (2%)
- 2 eggs
- 40 g (1/3 cup) flour
- 150 g (5 oz) mushrooms
- 5 g (1 tsp) butter
- 50 g (2 oz) cheese
- 1 tsp baking powder
Instructions
- Slice and fry the mushrooms in butter until golden.
- In a bowl, mash the cottage cheese with the eggs and grated cheese (fine-grain cottage cheese works best).
- Add the salt, baking powder, fried mushrooms, and flour; mix.
- Spoon heaped tablespoons of batter into a waffle iron and bake 3-4 minutes.
Tips
- Use fine-grain cottage cheese for the smoothest, most even batter.
- Do not overfill the waffle iron, so the waffles crisp up instead of steaming.
