Juicy homemade tortilla burger folded over melted cheddar, beef, tomato and lettuce

Ingredients

  • 1 large tortilla
  • 200 g (7 oz) ground beef
  • 1 onion (yellow or red), sliced
  • 2 slices cheddar cheese
  • 1 tomato, sliced
  • 2 tbsp burger sauce (or mix of ketchup, mayo and mustard)
  • 2-3 pickled cucumber slices
  • A few lettuce leaves
  • Salt and black pepper to taste

Instructions

  1. Season the ground beef with salt and pepper and spread it in a thin even layer over one half of the tortilla.
  2. Stir the chopped pickled cucumber into the burger sauce.
  3. Cook the beef-topped tortilla in a hot skillet until the meat is browned, then flip. Spread with sauce, add cheese, cover with a lid for 2-3 minutes until melted.
  4. Top with tomato, onion and lettuce, fold the tortilla over and cook 1-2 more minutes. Serve hot.

Tips

  • Spread the beef thinly and evenly so it cooks through quickly and stays juicy.
  • Keep the skillet hot and the lid on while the cheese melts for the best gooey finish.
