Ingredients
For the dough:
- 2 cups (250 g) flour
- 1/2 tsp salt
- 3/4 cup (180 ml) warm water
For the filling:
- 1-2 bunches green onions
- 200 g (2 cups) grated cheese
- Salt, to taste
- 1-2 tbsp olive oil
- Butter, for brushing
Instructions
- Mix the flour, salt, and warm water into a dough, adjusting flour or water as needed.
- Divide into small balls and cover with a damp towel.
- Chop the greens, grate the cheese (or mash soft cheese with a fork), season, and stir in the olive oil.
- Roll each ball into a circle on a floured surface, fill half, fold over, and seal the edges.
- Cook on a dry skillet about 20 seconds per side. Brush the hot flatbreads with butter.
Tips
- Keep the dough covered while you work so it stays soft and easy to roll.
- Roll the circles thin and seal the edges firmly so the cheese stays inside while cooking.
