Ingredients
- 500 g (4 cups) flour
- 10 g (2 tsp) dry yeast
- 25 ml (5 tsp) vegetable oil
- 1 tsp salt
- 1 tsp sugar
- 250 ml (1 cup) warm water
- 700 g (1.5 lb) ground meat
- 1 onion, chopped
- 1 can crushed tomatoes
- Pepper, to taste
- 120 g (1 1/4 cups) grated cheese
Instructions
- Dissolve the yeast, salt, sugar, and oil in warm water. Gradually add the sifted flour and knead into a dough. Rest for 1 hour.
- Saute the onion until golden, add the meat, season, and brown well. Stir in the crushed tomatoes and cook off excess liquid over high heat.
- Divide the dough in two, roll into rectangles, spread with filling, fold up the edges, and seal the ends. Bake at 180 C (350 F) for 15 minutes, add cheese, and bake 5-7 minutes more.
Tips
- Cook off the filling liquid well so the pide stays crisp, not soggy.
- Seal the ends firmly to keep the boat shape while baking.
- Add the cheese near the end so it melts golden without over-browning.
