Ingredients

  • 2 eggs
  • 1 tbsp soy sauce (less if you like)
  • Ham, tomato and cheese for the filling (or any fillings you like)

Instructions

  1. Lightly beat the eggs with the soy sauce, pour onto a hot pan and spread into an even pancake.
  2. Once the pancake sets, cut a line from the center to the edge. Mentally divide it into four quarters: place ham on one quarter, tomato on the second, and cheese on the third and fourth.
  3. Fold the pancake into an envelope and fry for a couple more minutes on each side. Serve with fresh herbs.

Tips

  • Keep the heat at medium so the egg sets without browning too fast. Love egg breakfasts? Try our Egg Tortilla Wrap and Avocado Egg Toast.
