Ingredients
- 1 sheet of yeast-free puff pastry
- 3 eggs (+1 for brushing)
- 100 ml (3.4 fl oz / about 1/3 cup + 1 tbsp) milk
- 150 g (5.3 oz) ham or other sausage, diced
- 100 g (3.5 oz) cheese, grated
- Salt, to taste
- Sesame seeds, for sprinkling
- 2 green onions, chopped
Instructions
- Make a simple omelet: whisk the eggs with salt and milk.
- Stir in the diced ham and green onions and fry over medium heat until set.
- Roll the puff pastry into a rectangle and make diagonal cuts along both long edges.
- Place the cooled omelet down the center, sprinkle with grated cheese, and fold the cut strips over the filling like a braid, pinching the center.
- Brush with beaten egg, sprinkle with sesame seeds, and bake at 180 C (350 F) for 25-30 minutes.
Tips
- Cool the omelet completely before filling, so the pastry stays crisp and does not steam.
- Keep the pastry cold while you cut and braid it for the cleanest, flakiest layers.
- Seal the ends well to keep the cheese inside while baking. For more pastry techniques, see Allrecipes and Serious Eats.
