Ingredients

  • 250 g (1/2 lb) puff pastry, thawed
  • 150 g (5 oz) ham, finely chopped
  • 150 g (1 1/2 cups) grated cheese
  • 1.5 tbsp sour cream
  • 1 tsp tomato paste
  • Salt and pepper to taste
  • 1 egg yolk, for brushing

Instructions

  1. For the sauce, mix the sour cream, tomato paste, salt, and pepper.
  2. Roll out the pastry, spread with sauce, and scatter over the ham and cheese.
  3. Roll up tightly and slice into 1-1.5 cm rounds.
  4. Arrange on a baking sheet, brush with egg yolk, and bake at 180-200°C (350-400°F) for about 20 minutes.

Tips

  • Keep the pastry cold until baking so the swirls puff up tall and flaky.
  • Use a sharp knife and a gentle sawing motion for clean, even rounds.
  • Do not overcrowd the baking sheet — leave room for the swirls to expand.
