This Healthy Chocolate Layer Cake is rich, moist, and deeply chocolatey — yet made with wholesome whole-grain flours and a light curd cream cheese filling. It tastes like a real celebration cake, but feels light enough for an everyday treat. If you love chocolate desserts that do not weigh you down, this one is a keeper, much like our Sugar-Free Coconut Chocolate Cake and Cherry Banana Chocolate Cake.

Ingredients
- For the cake layers: 2 eggs
- 100 g whole-wheat flour
- 100 g whole-grain rice flour
- 100 ml milk
- 4 tbsp cocoa powder
- 2.5 tsp sweetener
- 1/2 tsp baking powder
- For the cream: 500 g curd cream cheese
- 70 ml milk
- 3 tbsp cocoa powder
- 2 tsp sweetener
Instructions
- Whisk the cake ingredients until smooth. Cook as small pancakes in a skillet about 16.5 cm wide.
- Whisk the cream ingredients until smooth and uniform.
- Layer the pancakes with the chocolate cream.
- Chill overnight or at least a few hours to set. Top with melted sugar-free chocolate before serving.
Tips
- Let the layers cool completely before spreading the cream, so it stays thick and neat.
- For clean slices, chill the cake well and wipe the knife between cuts.
- Use good-quality cocoa powder — it makes all the difference in a lighter cake like this one. For more on choosing cocoa, see Allrecipes and Serious Eats.
