These meat cutlets are everything a weeknight dinner should be: crisp and golden on the outside, tender and juicy inside, and finished in the oven so they cook through evenly. A quick sear locks in the flavor, while milk-soaked bread and sautéed onion keep the patties soft. Serve them with mashed potatoes, rice or a fresh salad for a comforting family meal.

Ingredients
- 500 g (1.1 lb) ground meat (beef)
- 1 large onion, very finely chopped
- 2 garlic cloves
- 2 slices of white bread
- 150 ml (2/3 cup) warm milk
- 1 egg yolk
- Salt and spices to taste
- Vegetable oil for frying
Instructions
- Mince the onion very fine; sauté with the garlic until golden.
- Soak the bread in the warm milk.
- Mix the ground meat with the onion, squeezed-out bread, yolk and spices; knead well (pounding helps).
- Shape cutlets with wet hands.
- Sear 2 minutes per side in hot oil, then transfer to a baking dish and finish in the oven at 180°C (350°F) for 15-20 minutes.
Tips
- Knead and pound the mixture well — this helps the cutlets hold together and stay juicy.
- Do not crowd the skillet when searing; work in batches so the cutlets brown instead of steaming.
