Golden, crisp lavash rolls filled with savory turkey, melted cheese and sweet sautéed onion make a dinner that is both easy and satisfying. Brushed with a milky wash and baked until bubbly, they are perfect for slicing and sharing. Serve them hot from the oven with a simple salad for a quick weeknight win.

Ingredients
- 1 pack lavash
- 2 tbsp sour cream or Greek yogurt
- 70 ml (1/4 cup + 1 tbsp) milk
- 2 tbsp vegetable oil
- For the filling: 2 onions, 500 g (1.1 lb) turkey thigh, 200 g (7 oz) cheese, salt and black pepper, sesame seeds, 1 egg yolk + milk for brushing
Instructions
- Filling: sauté the finely chopped onion until golden. Add the diced turkey, salt and pepper; cook until nicely browned. Stir in the cheese and turn off the heat.
- Cut the lavash into strips; whisk the milk, oil and sour cream for the wash.
- Brush the lavash with the wash, add filling, roll into logs and arrange in a baking dish.
- Brush with egg yolk-milk and sprinkle with sesame.
- Bake at 190°C (375°F) for 20 minutes.
Tips
- Do not overfill the strips, or the cheese will leak out before the rolls crisp up.
- Let the filling cool slightly before rolling so the lavash stays pliable, not soggy.
