For safe handling of ground beef, the U.S. Department of Agriculture has clear, practical guidance.

Ingredients
- 500 g ground beef
- 1 tomato, finely chopped
- Fresh parsley, chopped
- 1/2 tsp herbes de Provence
- 1/2 tsp khmeli-suneli
- Salt and black pepper
- Lavash bread
- Wooden skewers
Instructions
- Soak the skewers in water for 20 minutes.
- Mix the chopped tomato and parsley into the ground beef with the salt and spices.
- Spread the meat 1 cm thick over the lavash, roll into a tight tube, and slice into rolls.
- Thread the rolls onto the skewers.
- Air-fry at 200°C (400°F) for 10-15 minutes, or bake at 200°C for about 20 minutes.
Tips
- Soak the skewers well so they do not scorch in the oven or air fryer.
- Spread the meat in a thin, even layer so the rolls cook through and crisp at the edges; Serious Eats has great guidance on grilling skewers.
- Serve with fresh vegetables, pickled onions, or a yogurt sauce for dipping.
