Ingredients
- 150 g (5.3 oz) cookies (digestive or shortbread)
- 50 g (3.5 tbsp) butter, melted
- For the mousse layer:
- 500 ml (2 cups) heavy cream, 33% fat
- 250 g (9 oz) chocolate (dark, milk, or a mix)
- 19 cm (7.5 inch) springform pan
Instructions
- Crush the cookies into fine crumbs, mix with the melted butter, and press firmly into the bottom of the pan to form the crust. Refrigerate.
- Melt the chocolate in a double boiler and let it cool slightly.
- Whip the cream starting on low speed and gradually increasing, until firm, stable peaks form.
- Set aside 2 tablespoons of melted chocolate for decoration (in a piping bag). Stir a spoonful of whipped cream into the remaining chocolate to temper it, then fold the chocolate into the whipped cream until smooth.
- Spread the mousse over the chilled crust and smooth the top. Pipe a decorative pattern with the reserved chocolate.
- Refrigerate for at least 3-4 hours before serving.
Tips
Let the melted chocolate cool slightly before combining — hot chocolate will deflate the whipped cream. For clean slices, dip a sharp knife in hot water and wipe it dry between cuts. Looking for more no-bake inspiration? Browse the dessert collections on allrecipes.com.
